Spinach & Feta Egg Whites are full of flavour and a beautiful combination of greeny spinach and white egg. Eggs and spinach both are a nutritional powerhouse.
3 egg whites
2 cups fresh baby spinach
1 Italian tomato, chopped
¼ cup chopped onion
¼ cup crumbled feta cheese
Salt & pepper to taste
1. Chop onion & tomato. Spray pan with cooking spray and put on medium heat. Cook onions until translucent.
2. Add 3 egg whites, tomato, spinach and cook until cooked through.
3. Just before you are ready to take off heat, take 1/2 of the feta cheese and throw in pan and melt.
4. Top with remaining crumbled cheese and salt and pepper to taste.
