Scrambled Eggs with Lean Meat Sandwich is a delicious healthy snack. You can enjoy this recipe anytime of the day as a light meal or as a breakfast.
1 large Egg
1 oz Kroger whole milk
1 pat Butter, salted
2 slices seven-grain bread, toasted
2 oz lean meat grilled chicken, sliced
¼ avocado, sliced
2 Tbsp crumbled feta
4 Kalamata olives, pitted
½ cup mache
Salt to taste
1. For the sandwich: Top one slice of toast with chicken, avocado, feta, olives, and mache. Top with the second slice.
2. For the eggs: Preheat skillet on medium high and melt butter to foaming. Beat together all other ingredients and add to skillet. Reduce heat to low medium and as soon as the egg mixture begins to set around the sides, gently stir. Continue letting set and gently stirring until desired consistency.
