Quinoa with Toasted Coconut & Pistachio recipe is loaded with calcium, protein and iron. Coconut and Pistachio enhance the taste of this recipe.
1 cup quinoa
2 cups unsweetened coconut milk
1 tbsp almond butter
1 tsp cinnamon
½ tsp all spice
½ cup of shredded toasted coconut
½ cup of slivered pistachios
1. Cook quinoa with coconut milk and the almond butter and spices, if using.
2. When cooled down add shredded toasted coconut and pistachios.
3. Add honey to sweeten.
