Peanut Butter Granola Bars are mouthwatering energy bars. Peanut butter supplies healthy monounsaturated fat, B vitamins, magnesium, and protein.
Oats 2 cup
Pumpkin seeds, without salt .5 cup
Sunflower Seeds, without salt, .5 cup
Flaxseeds, ⅓ cup Peanut Butter,
reduced fat, .5 cup
Honey, .5 cup
Brown Sugar, 1 tbsp
Cinnamon, ground, 1 tsp
Vanilla Extract, 1 tsp
Cranberries, dried, unsweetened, 0.5 cup
1. Toast oats and nuts @ 400 degrees - about 6 minutes. Line a square baking pan with parchment or wax paper (If you use wax paper spray with non stick cooking spray first).
2. Mix honey, peanut butter, cinnamon, vanilla and sugar in a saucepan at a low heat until smooth. transfer the toasted dry ingredients and cranberries to a large bowl and add the wet mixture.
3. Mix well and press into the square baking dish. Pull up from the parchment paper and set aside to cool. Cut after about 30 minutes.
