Cajun Chicken with Buckwheat on the Crust is an awesome buckwheat recipe for dinner. This is basically a French recipe. This is simple and full of flavours.
¼ cup buckwheat flour
2 tbsp sweet paprika powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
½ tsp cinnamon powder
Salt and pepper to taste
4 chicken thighs or breasts
Coconut oil
1 red chili, finely chopped
1 small handful almonds, chopped
1. Mix ground buckwheat, paprika, turmeric, coriander, cumin, cinnamon, salt, and pepper together. Coat chicken in mix.
2. Heat a pan with coconut oil over medium-low heat. Cook chicken through on both sides of each piece.
3. Serve topped with chili and almonds, and season with salt and pepper to taste.
