Tex Mex Oats & Egg Bowl is not only a healthy but delectable recipe. Generally, we eat oats for breakfast but this combination makes morning breakfast more fun, delicious, and nutritious.

Ingredients

2 eggs

¼ cup oatmeal

¼ cup fresh mushrooms cut up

¼ cup spinach fresh and torn

¼ cup salsa or to taste

¼ cup cheddar cheese or to taste

Water

Method

1. Mix all ingredients except the cheese in a microwavable bowl or dish. Add water to make wet about 1/8 of a cup.

2. Put in microwave and cook on high for 2 minutes. Add cheddar cheese to top and microwave about 1 minute longer.
