2 Corn Cakes

1/2 cup mixed chopped tomatoes

2 tbsp shredded basil leaves

1 tbsp shredded mint leaves

Salt & Pepper


1. Combine tomatoes, mint and basil in a bowl, season to taste.

2. Spoon onto 2 corn cakes to serve.
