Chicken & Black Bean Soup

Chicken & Black Bean Soup would be your favourite soup on chilly days. This soup is made in one pot and easy to prepare. Check out this healthy recipe for your dinner.

Ingredients

    •  1 tsp canola oil

    •  1 cup chopped onion

    •  2 tsp garlic

    •  2 tsp chili powder

    •  1 tsp paprika

    •  1 tsp cumin ground

    •  6 cups home made chicken broth

    •  1 cup stewed tomatoes

    •  1 green pepper chopped

    •  12 oz. boneless chicken breast cut in small pieces

    •  2 cups canned or freshly cooked black beans

    •  Juice of a lime

    •  Cilantro to garnish

  •  Salt & pepper to taste

Method

1. Heat the oil in a soup pot and add onion, garlic, chili powder, paprika, and cumin. Cook until onion softens.

2. Add Chicken broth, tomatoes and green pepper and bring to a boil. Reduce heat to a gentle boil and add the chicken and beans.

3. Add salt and pepper. Cook stirring for about 8 minutes or until chicken is no longer pink inside.

4. Add the cilantro and lime juice before serving.
