Black Bean & Zucchini Curry

Black Bean & Zucchini Curry is a spicy and nutritious curry. Serve this hot curry with steamed rice or chapati. Check out this delicious recipe.


Thick slice of sweet onion diced

Small zucchini diced

Salt & Pepper

1 tsp chili powder

½ tsp cumin

½ tsp curry powder

1 can of black beans drained and rinsed

2 Tbsp tomato puree

Olive oil - for cooking


1. Put olive oil ( about 2 Tbsp ) in a medium pot and warm over medium heat. Add the onion and cook for a few minutes until they start to soften.

2. Add the zucchini and sprinkle with salt & pepper. Cook for a few minutes then sprinkle with the spices. Stir in the beans and tomato puree.

3. Lower the heat, stir occasionally, until ready to serve.
