Baked Eggs with Brie. Check out this egg recipe which is great for breakfast or evening refreshment.


  • 2 eggs

  • 100 g finely chopped button mushrooms

  • 2 tbsp finely chopped fresh flat-leaf parsley

  • 1/2 red onion, finely chopped

  • 100 g coarsely chopped brie cheese

  • 1 tbsp olive oil, plus extra


1. Oil four 3/4 cup ovenproof dishes with oil.

2. Preheat oven to 200°C.

3. Heat 1 tbsp olive oil in a pan over medium heat; cook red onion, mushrooms and parsley, stirring, until onion softens.

4. Remove pan from heat; stir in half of the brie cheese. Divide mushroom mixture among dishes; break 2 eggs into each dish.

5. Bake eggs 5 minutes; increase oven to 220°C. Sprinkle eggs with the remaining brie cheese; bake until cheese melts & eggs set.
